recipe: birthday bundt cake


Last week was my beautiful mama's birthday. To make it a little bit special (and because no one should bake their own birthday cake!) I decided to challenge myself and bake this bundt cake. 

This is an old family recipe that my mom brought with her from England. My whole family loves it, but growing up we always called it "Dad's Favourite Cake". So it's a crowd pleaser for sure. Today I thought I would share the recipe with all of you!

you will need: 
1 1/2 cups of butter (or marg.)
2 cups sugar
3 1/2 cups flour
3 large eggs
2 tbsp baking powder
pinch of salt
1/2 cup of milk

1 tsp vanilla
1 tbsp (unsweetened) cocoa powder
1 tsp red food colouring/strawberry flavour

Begin by creaming together your butter and sugar. Add the 3 eggs one at a time, beating well between each one. 
In a separate bowl mix your flour, baking powder and salt. 
Alternate adding the flour and milk to your batter and mix until everything is well incorporated. 

Next divide the batter up into three equal sections (in separate bowls). Add the vanilla to the first bowl, the cocoa to the second and the red food colouring/ strawberry flavour to the last.

Add spoonfuls of each mixture to a bundt cake form. At this point you'll want to add each mixture separately. Once all the batter has been added, use a knife and gently swirl the mixtures together. You don't want them to be completely mixed up, just marbled. 

Bake in a 350 degree oven for one hour.

Once the cake is done, remove it from the pan, let cool and ice the top with a basic icing (water and powdered sugar). The icing will drip down and pool around the bottom of the cake. Don't worry about this- it's part of the fun and will most likely get swiped by little hands... at least it always did in our house!
